Condensed milk rusks are a South African-style crunchy, twice-baked biscuit made with sweetened condensed milk in the dough.
They’re similar to traditional buttermilk rusks, but the condensed milk gives them a richer, sweeter, slightly caramelized/milky flavor. The dough is baked first like a loaf or tray bake, cut into thick fingers, then dried slowly in the oven until hard and crisp.
They’re traditionally eaten by dunking them into coffee or tea—the rusk softens and absorbs the drink without immediately falling apart.
